Just cooked a date loaf in the BBQ ( $99 table top with lid, the one in the magazine this month) while the cake came out really good after 25 mins, the bottom was a bit burnt. Any ideas how to stop this???

Spud, when we used to cook in real ovens (back in the olden times) it was common to put a whole, damp newspaper under the cake as it got close to cooked. Probably not a good idea in a BBQ, so I suggest that a few layers of baking paper in the bottom of the tin might be a good start, instead of just one. Perhaps the temp could be lowered as you get close to time as well. Hope this helps and your next cake is a real success Deborah

No Fat Fruit Cake.
1 Kilo mixed fruit 1/2 litre Orange or Apricot juice 2 cups Self Raising Flour 1 teaspoon Mixed Spice
Soak mixed fruit in juice overnight Next day preheat oven to 160 degrees C. Mix in the flour and mixed spice Bake for 1 hour.

Thanks Deborah, I will try that, I did use baking paper but only 1 piece, I may have to up that & turn the power down close to time. Happy travelling
