This is a good spot to share your favourite recipes on the road, and to tell us about the cooking appliances you like to use. (I first found out about the turbo oven on the C&M forum!) We like food that is simple to cook with ingredients that are readily available – but it’s nice to try something a bit different!

Hi Rob & Marg.
The cooking I like is the ones that are easy and quick to prepare. After all we ” Eat to live,… not…. live to eat.

We also have a confection oven, and it prepares the meals quick and easy. Different story when free camping. The old fashion fry pan wouldn’t be without it.

A quick, easy & a goodie (I reckon)
Spicy Spaghetti Bog

Ingredients:

 500g beef mince
 1 medium onion diced
 1 medium carrot grated
 1 x 400g can tomatoes
 1 x 500g jar Dolmio Spicy Peppers Pasta sauce
 2 tablespoon of olive oil
 Approx 250-300g thin Spaghetti (a good handful)
Method:
If you have the thin spaghetti which is around 250mm long break in halves (just means you can get away with a smaller sized pot for cooking it)
Place spaghetti in a saucepan or large microwave dish & cover with boiling water cook for approx 10 min, drain & rince
Place oil & onion in a wok on medium heat & cook for a couple of minutes
Add mince to wok & cook until it changes colour
Add can of tomatoes (if whole tomatoes break up a little)
Add carrot & stir in
Add pasta sauce to wok, have wok on low to medium heat & allow to simmer
Once spaghetti has drained add to wok
Ensure its heated through & serve up

Note:
•If you don’t like it spicy you can choose other flavours of pasta sauce & can also use other types of pasta if you wish
•If a wok is not available can use camp oven or large frying pan

Preparation time: Approx 10-15 mins
Cooking Time: 20 mins approx
Serving Size: Approx 6 serves

Here’s an excerpt from our Tassie tour blog.

out of the wind though it is quite nice and I set up the Choofer and light it, to cook tea, for those of you who don’t know what a choofer is, it is a stove/oven/BBQ I made from an old 9kg gas bottle (if you want a full description and photos, look at http://www.candm.com.au/ that is the caravan and motorhome magazine website, go to the forum, and look under bright ideas, search for the entry “CHOOFERS” by Frank and Brenda) once it got up to heat I put in some marinated chicken mini drumsticks, wrapped in foil, and put the lid on, while that was cooking I got the flan base we had bought today made some thick custard, put it on with some tinned apples, and fresh blackberries I picked yesterday, covered that in foil, and got the vegies ready, while we had tea, I put the pie in the choofer and 40 minutes later desert was ready, it’s just as well we’re doing a lot of walking isn’t it, while we are having desert the water bucket is on the choofer to heat the water for the dishes and our wash, after having a chat by the camp fire with the other campers, we settled in to watch a movie.

Sweet Chilli Razor Fish
Ingredients:
 Approx 2 hand full’s of razor fish meat
 1-2 tablespoons sweet chilli sauce
 1 tablespoon lemon juice
 1 teaspoon minced garlic
 Butter (a couple of dollops)
 1 six pack of choice

Method:

Place all the ingredients (except butter) in a container & mix well. Refrigerate (if possible for a couple of hrs)
While waiting for it to marinade, empty the contents of the six pack (optional)
Melt butter on a hotplate and add razor fish (only cook for a couple of minutes)

Note:
• Alternately you can leave in fridge for a couple of hours (or longer if desired) & eat as they are
• Could replace the razor fish with scallops

Preparation time: Once shelled approx 5 mins

Cooking Time: 3 mins approx

I’m with you, Jay and Dee… I like things that are simple to prepare.

The recipes you sent in sound yummy, Pouchie and Frank & Brenda!
Nothing like having tried and true recipes that are genuine favourites with people…

Hey guys,
Here is a popular one around our way.

The 6 minute Golden Syrup Pudding

Ingredients

2-3 Tablespoons Golden Syrup…the more the merrier
60 grams softened butter
1/4 cup caster sugar
1 egg
1 teaspoon vanilla essence
1 tablespon finely grated lemon rind…this is entirely optional..we leave it out
3/4 cup self raising flour
1/4 cup milk

Method

Lightly grease 600ml capacity microwave safe pudding basin or bowl
Pour syrup over base of prepared basin
Combine remaining ingredients in a medium bowl and beat to form a smooth batter.
Pour batter over syrup in basin.
Cover and microwave on MEDIUM for 5-6 minutes until just cooked in centre.
Leave to stand in basin for 5 minutes.
Turn onto a serving plate.
Drizzle with extra golden syrup.
Serve with custard or ice cream..or both…lol.
