Another vote here for the oven bag.
I find the throw away trays too soft to handle. They wobble all over the place, so a roasting dish of some kind. I actually use a non-stick square cake tin in the van as it is smaller than all my roasting dishes and still big enough for my roast meat in an oven bag.

Hi everyone, i am cooking a Rendang curry and was looking on a cooking site for parathas to go with it and came across this recipe. I thought it would be good to cook on the road cos its so easy.
PARATHAS ingredients: Puff pastry method: cut each piece of pastry into 4 not necessary to grease pan as there is enough fat in pastry cook on both sides. Do not over cook as pastry burns easliy. serve hot. great with curry or scrambled eggs and tomatoes

Thanks Susan & Peanut for your replies on roasting meat. Susan, your new chicken roast recipe idea looks great, so is the puff pastry for Parathas , can't wait to try these - am always up for a new recipe. I used to buy Super Food Ideas mags, & placed post it notes on recipes I wanted to use again, so cataloged the recipes into each food variety. Have scanned the recipes & index & now all is on my laptop to take on any van trip ( over 350 pages) - time consuming, but hopefully will be worth it as I won't have to take loads of recipe books Sue

Sue you can line the bottom of your oven with the magic cooking sheet to catch any spills. I think Bunnings sell this on the roll now. http://www.magiccookingsheet.com.au/

Thanks Susan most of the mess was on the 3 sides, door & ceiling of the oven. Have looked at the link you inserted into last reply. They look amazing & great for the BBQ. Not sure how safe they would be with a flame nearby. I will probably go the safe method & use oven bags many thanks cheers Sue

I have 2 sheets in the van and use them all the time. They are great for the bbq for marinated meat. I cook bacon and eggs on them. One of the best things we have bought.

Hi Ladies I have enjoyed reading your comments. I have just bought a small Jayco caravan and went away in it last weekend with a friend and really enjoyed it. I can't wait to go away again. My plan is to do a lot of travelling by myself are there any ladies who travel with a caravan on their own out there. I would love to hear about your experiences

Me for one, I travel on my own and with friends from the forum UWE. Can only do a few days at a time due to work restrictions, but I did recently manage to get away for 10 days, it was great and even ventured further afield than normal. Free camping 6 nights and 4 nights in a C/P. Have met lots of interesting people. I have a small Jayco poptop towed by a sedan.
