It's been a while since I made one (in the dreampot) but make the dough ( I kneed by hand for 10-15 minutes) let it rest in a warm place for 1 hour, kneed for 5 minutes, rest for an hour to an hour and a 1/2 (here I kneed again and rest for an hour and a half, the bead comes out lighter) or you can now cook in the pot for 20 minutes, then let the process finish in the dreampot/shuttlechef, for at least 45 minutes (I take it out after 40 and finish the loaf off in the choofer to give it a crust)
