Post Good simple recipes
What does everyone eat on the road????? I see all these complicated recipes but as we travel light I don't keep a huge amount of ingredients .
I like to use the park BBQs so chops, sausages, steak and chicken. The occasional jar of sweet and sour sauce and a quick stir fry are good. I also like the split chooks you can get, put on BBQ and cover with foil for 30mins. What do you all do out there?????
Veggies done in microwave, rice and pasta on stovetop. Electric hot plate outside for frying etc GOD I HAVE TO GO IM GETTING HUNGRY!!!!!

Not a main meal but pretty handy desert.
Just look at the Weber pizza recipe in this heading. It may look complex but my wife and I prepare a couple in 20 minutes. Cooking time 30 to 40 min.

You are on a break you know. :D . I didn't get to 90 Kg through not eating well. :D
Working on that issue now though.
And why are you swearing " Microwave??" the nerve. :lol:

Quick CHICKEN (Stolen recipe)

1 cup white vinegar
1/2 cup veg oil
1/4 cup Worcestershire sauce
1 TBS Sea or Kosher salt
1 TBS white sugar
1 tsp garlic powder
1 tsp onion powder
1 tsp white pepper
1/2 tsp celery salt

Mix/shake till well dissolved. I put mine in an old Worcestershire bottle with the shaker top. You can marinate the chicken in the sauce for up to 2-8 hrs before cooking. If so discard marinade and make fresh for the cooking sauce.
I apply the sauce every 5 min to both sides and turn every 5-10 min. Apply one final coating 5 min before removing from the grill. You can't put too much sauce on while grilling. It will build up a nice layer of flavours.
I use the Weber Baby Q, but I think it would do well on your favourite non stick pan, with no water and a high heat cook.
Cooking time 30 min.

Mally for two of my favourites I use the packets of French onion soup mix, they are cheap and easy.

1; I get a chicken breast and slice it thin.

put 50% flour and 50% soup mix in a bag and shake, add the chicken and shake.

cook in a little rice bran oil, cut up any leftovers and put it in your salad. (my own invention and it's a big hit)

2; get a good piece of rump steak,

lay it on some aluminium foil.

cover the steak in the dry soup mix and wrap in the foil.

cooking times will come down the thickness of the foil and the heat applied,

on my BBQ with the lid down it is a maximum of 15 minutes and in my oven it's 20 minutes.

when done right the steak will pull apart like fish, if it's tough or dry cook it less.

Well i cooked dinner tonight, for myself.

1. A can of Harvest Stew(Made i Australia)On special at Woolworths for $ 2 a can.

2. A packet of CC Corn chips(Made in Australia)

Put a handful of cornchips in a deep plate or bowl, empty the can on top.

Put the lot in the microwave for about 2 mins.

Enjoy. See its easy :lol:

A couple of pancake recipes for you

Jamie Oliver’s PANCAKES

1 Cup SR Flour (any sized cup) level across top of cup

1 Cup Milk (use same sized cup as for flour)

Pinch Salt

1 egg

Optional Fruit of your choice e.g grated pear, strawberries, raspberries, blueberries etc.
Whisk together

Place knob of butter in frying pan then add 1 tablespoon of mixture to make 1 pancake. (Can do a few pancakes at a time in pan)
When mixture starts to bubble flip pancake over

Blueberry Pancakes

Ingredients
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
1 1/4 teaspoons white sugar
1 egg
1 cup milk
1/2 tablespoon butter, melted
1/2 cup blueberries (fresh or frozen)

Method
Sift flour, sugar, baking powder and salt into a bowl. Beat the egg and milk together and mix into the dry ingredients. Add melted butter and beat well. Stir in blueberries

Now here is the important part. Leave sit for an hour Over that hour you will see the batter fill with millions of tiny little bubbles and this makes the pancakes very light and fluffy.

Cook on a hot plate and serve with dollop cream and "real" maple syrup.

A couple of years ago we bought a dehydrator,
buy frozen veg or blanche your own and dehydrate them, then vacuum seal and you'll always have vegies with you.
In the "Asian" section of the supermarket, you'll find dehydrated mushrooms, very handy to add to any recipe you want, just add vegies in the cooking process and they'll re-hydrate as they cook, or you can boil them for 10 minutes, and have them with a meal.
Saves on freezer space, or weight of cans.
Use packets of simmer sauces instead of jars, to save on weight, tonight at home, I made a Korma curry with a "Passage to India" simmer sauce but we use them on the road as well, Master foods make a great range of packet mixes, but you'll have to carry some canned tomatoes for a few of them.

In 1968 i was a boarder with a couple in Erskine St. Sydney. Saturday for lunch the cook would make us a plateful of open sangers. One of them was Beef Tatar.

Here goes Beef Tatar.

You make a pattee, similar to a hamburger pattee, but you use prime raw beef, i think she would buy the beef, mince it herself or get the butcher to do it. You put that on a slice of bread, she used black rye bread, but any bread is ok.
Then you put a few raw onion slices on top.
On top of that you put a raw egg yoke, not the withes.
Salt and pepper to taste. Enjoy.
I looked at it a couple of times, but ate it and it was not to bad. I was not game to say anything, because she had to watch the wrestling with Mario Milano and Killer Kovalski. :)
I haven't had it since, prefer it all fried. But if someone wants to have a go, there it is.

Like the polish lady who used to make a beautiful chocolate cake when we visited would never give us the recipe until years later told us she used 500mls of pigs blood. Never felt the same about it.
