750 grams self raising flour ( roughly about that)
Good dollop of butter or margarine if you want
Now for my secret ingredient
1 can of apple cider alcoholic or non alcoholic ( your choice )
Put camp oven on a bed of coals to heat up.
Rub the butter into the flour , then add half the cider and continue to mix through adding more cider until mixture resembles bread dough.
Shape dough into a ball
Place your trivet into oven and line bottom with layer of alfoil.
Put dough in and replace camp oven on same bed of coals and cover lid with plenty of coals.
About 25 mins later you get an awesome damper.
Try a few variations
Add some bacon and cheese to the mix ( great for smoko )
Or
Add some dried fruit and chocolate chips to the mix ( awesome dessert)
Which ever way you go with this recipe you will be rewarded with a great damper.

BEER DAMPER
3 1/3 Cups self raising flour
Pinch salt
375ml beer
Slowly mix beer into flour & salt Put dough into tin lined with grease proof paper
Cook for 40 mins – knife should come out clean when inserted into damper
SWEET DAMPER
3 cups self-raising flour
2 tablespoons butter
1 tablespoon sugar
Handful of sultanas
Mixed peel
Water & Milk 1 cup approx
1 can drained crushed pineapple
Mix flour and sugar and run in butter.
Add milk and water to make a firm dough
Place in a greased camp oven
Cook for 50 – 60 minutes with a medium heat

LEYLAND BROTHERS DAMPER
The Leyland’s suggested that this damper would take 20-25 mins to cook, but they had used an aluminium cake tin, whereas our cast iron oven takes longer to heat through.
In the end I took it out after about an hour and it was cooked perfectly (except the top was a little browner that I had intended). It was a huge hit with everyone on our camping trip. It tasted much like a traditional scone you might enjoy with a Devonshire tea. Damper is traditionally enjoyed in Australia with Golden Syrup, but we also had many people putting butter, jam, honey etc. or combinations thereof.
Ingredients
• 1 kg of flour sifted into bowl
• 4 heaped dessert spoons of powdered milk (they used ‘Sunshine’)
• 2 heaped dessert spoons of baking powder (even if you use self-raising flour)
• 1 teaspoon of salt
Method
• Step 1 Mix dry ingredients thoroughly. Add water, but only enough to achieve a tacky mixture. Knead it like bread dough.
• Step 2 Put into pan or camp oven dusted with flour. We used a large camp oven (i.e. cast iron camp oven) in hot coals to cook the damper.
I dug a small hole in the coals and put the oven in, then carefully put hot coals around it and on the lid. We also used a trivet to stop the base from burning
