Croc Kebabs with Prawn and Green Bean Salad (DVD 152)

These croc kebabs and salad is a really tasty summer meal. Everyone who have tried this grean bean and prawn salad has voted it tops! Please remember that croc kebabs will be tough if cooked for too long. Work on about the same cooking time as chicken; perhaps a bit less.

 

Ingredients

 

  • Croc kebabs (of course you can substitute any other meat!)
  • 300 grams green beans
  • 750 grams of cooked, peeled king prawns
  • ½ bunch of shallots, finely chopped
  • ½ cup continental parsley, roughly chopped
  • 1 garlic clove or tsp garlic from squeeze tube
  • ½ cup red wine vinegar
  • ½ tsp curry powder
  • 1 tsp sugar
  • ½ cup olive oil
  • Salt and pepper

 

Method

 

  1. Bring a pot of water to the boil and add beans and salt. Cook for about 3 mins, drain, and then immediately plunge the beans in cold water (this helps them to retain a nice bright green colouring).
  2. Whisk garlic, vinegar, curry powder, sugar, oil, salt and pepper together.
  3. Toss the prawns, beans, shallots, parsley and dressing together and serve.
