Just cooked a date loaf in the BBQ ( $99 table top with lid, the one in the magazine this month) while the cake came out really good after 25 mins, the bottom was a bit burnt. Any ideas how to stop this??? :-x

Spud,
when we used to cook in real ovens (back in the olden times) it was common to put a whole, damp newspaper under the cake as it got close to cooked. Probably not a good idea in a BBQ, so I suggest that a few layers of baking paper in the bottom of the tin might be a good start, instead of just one. Perhaps the temp could be lowered as you get close to time as well. :rolleyes:

Been looking for, but can't find the recipe for the Low Fat Fruit Cake. Where is it please ?

No Fat Fruit Cake.

1 Kilo mixed fruit
1/2 litre Orange or Apricot juice
2 cups Self Raising Flour
1 teaspoon Mixed Spice


Soak mixed fruit in juice overnight
Next day preheat oven to 160 degrees C.
Mix in the flour and mixed spice
Bake for 1 hour.

Enjoy.

Thanks Deborah, I will try that, I did use baking paper but only 1 piece, I may have to up that & turn the power down close to time. Happy travelling

Just watched this months DVD and heard our name mentioned in the cooking segment. Thankyou sooo much for the mention. The kids think it is great that mummy and daddy know someone on TV...lol.
