I got this recipe from C&M Mag 176. It's for an oven but you may like to try it. Very simple and tastes nice:

Soak 1kg of mixed fruit (my wife included cherries and peel) in 600ml of Chocolate or Coffee Flavoured Milk (we have only tried Coffee) for 24 hours. Then, you simply add 2 cups of self raising flour mix and bake for about 90 mins at 160 degrees in a fan forced oven.

(Thanks to Tom & Sylvia Latham for submitting to mag.) :D

Have tried the recipe that BC47 has posted - it is a treat.

Have sent it to many others and they have had the same success. I used a double strength coffee drink from Woolies.

hi there, 8-) I made that fruit cake the other day....the chooks loved it! I dont know what i did wrong, I think the king of the castle has a very sweet tooth and it was not that sweet, i soaked the fruit in milk coffee added the 2 cups SR flour, baked it for about 1 1/2 hrs.It looked fantastic..BUT tasted awful.
thanks anyway I will give it another go later on and modify the recipe.
cheers

You might need to add a bit more flour, as those that like plentyof cake will want it.

I have a bread maker that has a bake function on it - so i cook this fruit loaf for approx 1 hour or until cooked (ie not soft in the middle) so could work for a camp oven - this is the 1/2 size receipe so just double for camp oven
Bread maker purchased from Aldi
soak together for 10mins
1 cup rolled oats
1/2 cup of sugar
1 cup of milk - I just use dried milk powder (3 tbsp to 1 cup of water)
1 cup of dried fruit / nuts - what ever you have in the pantry
add
1 cup plain flour
1 tsp baking powder
keeps well - just slice it
sometimes I add grated lemon rind , handful of coconut to change the flavour
