Romanian Apple Cake
Ingredients Serves: 12 5 apples, peeled and cored 3 eggs 1½ cups white sugar ¾ cup vegetable oil 1 teaspoon baking soda 1 teaspoon ground cinnamon 1 teaspoon vanilla essence 2 cups (250g) plain flour 3/4 cup chopped walnuts Preparation method Prep:20 mins | Cook:55 mins 1.Preheat oven to 175 degrees C. Grease and flour a 23x33cm cake tin. Cut the apples into 2.5cm wedges. Set aside. 2.In a large bowl, whisk together the eggs and sugar until blended. Mix in the oil, baking soda, cinnamon and vanilla. Stir in the flour just until incorporated then fold in the apples and walnuts. 3.Pour batter into prepared tin and bake for 55 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool slightly. Serve warm or at room temperature
