GLAZED APPLE,CARROT AND WALNUT LOAF
Glazed Apple, Carrot and Walnut loaf
2 Cups Plain Flour 1 Cup packed brown sugar 1 tbs baking powder pinch of salt 1 tsp cinnamon 1/2 tsp nutmeg pinch of mixed spice and allspice 1/3 cup apple juice 75grams melted butter 2 Large eggs 1 Tart Cooking apple peeled and grated(i used granny smith) 1 Large carrot peeled and grated Handfull of toasted walnuts chopped 2tbs Demarrera sugar for sprinkling on top,plain sugar is fine too
Glaze 4 tbs apple juice 2tbs caster sugar
Pre heat oven to 180oc Grease and line a loaf tin
mix Flour, sugar,baking powder, salt, and spices in a large bowl
Whisk eggs, apple juice and melted butter together
Squeeze out excess liquid in apples and carrots ( I was lazy and didnt do this and it still turned out fine)
Add egg mix to dry ingredients and stir till combined. Fold in carrot , apple and walnuts. Pour in tin and smooth top sprinkle demerrera sugar on top and bake in a moderate oven for 1-1 1/4 hours till skewer comes out clean
Mine took about 50 mins so keep an eye on it. I usally start checking at about 50 mins
Cool in tin and heat glaze till sugar dissolves,then pour over loaf gently Use a skewer to prick holes in the loaf All over so the glaze can seep into loaf.
