Shortbread Biscuits

Hi,
Does anyone have tried and tested shortbread biscuit recipe.

I am not completely happy with my current recipe. It's ok but a bit too crumbly. ( is crumbly a word ?)

Current recipe : 250g unsalted butter ,1/2 cup caster sugar,1 tablespoon lemon rind, 2 1/4 cups plain flour

G'day Jill,

My wife's friend makes the best shortbread biscuits either of us ever had. However my wife has been unable to make them as good using that recipe.

The only difference I can think of is the oven :confused:

The first recipe here is the one used. The second one I can't comment on.

This recipe was made for years by my Aunt. Her shortbread biscuits were the best present at Christmas

AUNTIE GWEN’S SHORTBREAD RECIPE

8 oz butter (227 grams)
½ cup caster sugar
3 cups plain flour
Beat butter adding sugar gradually, then add plain flour
Divide dough into 2 x 8” sandwich tins
Prick with fork and cut into pieces
Bake 20mins on 350F
Then 40 minutes on 300F
