Tomato Cream on Toast

Ingredients:
 3-4 tomatoes
 1 onion
 2 eggs
 Approx ½ tablespoon butter/spread
 Pepper to taste

Method:
Dice tomatoes
Finely dice onion
Place butter, onion, tomato and a grinding of pepper into a saucepan on medium heat (simmer) for 15 minutes or so
Crack the eggs into the saucepan & continue to stir until egg starts to cook.
Leave on heat for another few minutes & season with more pepper if required
Serve with toast

Note:
•A quick simple feed for breakfast or any other time you feel like a light meal

Preparation time: approx 5 mins
Cooking time: 20 mins approx
Serving Size: approx 2 serves

Chilli & Garlic BBQ Abalone

Ingredients:
 2 medium to large abalone
 1 teaspoon minced garlic
 ½ teaspoon minced chilli
 Butter (a couple of dollops)
 2 rocks/bricks or similar (explained later)

Method:
 Remove abalone meat from shells & trim up
 Lay the meat flat on rock & belt the doodoo out of it with the other rock (watch out the meats likely to take off). Pound 3-4 times or until meat starts to split. Sounds a bit primitive but it tenderises the meat (we are camping after all).
 Lay flat on chopping board & slice thinly (slice vertically not horizontal).
 Place all the ingredients in a container & mix well. Refrigerate (if possible for a couple of hrs or more) give it a good shake every now and then to ensure the flavours are mixed right through
 On a nice hot BBQ plate melt butter and tip all the abalone meat & juice onto the barby plate & stir while cooking (only cook for a few minutes)
 Eat straight off the barby ---- & Enjoy

Note:
• If you want to cook more than 2 abalone adjust the ingredients to suit
• Normally use it as an entrée prior to the main barby

The most dangerous cake recipe

5 MINUTE CHOCOLATE MUG CAKE

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract

1 large coffee mug

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.

EAT! (This can serve 2 if you want to feel slightly more virtuous). And why is this most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

Hey Cruiser100s, we have achieved success with this, the most dangerous of chocolate cake recipes.
It is bloody lovely.
The navigator and I are currently tucking in to one of the nicest, and easiest, chocolate cakes in the history of man.
This is definitely going to be on our favourite to do recipes.

PS...Navigator has just informed me, now we need to get a microwave put in the van so we can cook it when away...lol.
Just a footnote, our microwave in the kitchen is only 800 Watt so we needed 4 minutes to cook it...no biggie but thought I would post so people who only had 800 Watt microwaves could do it too.

also if you put it in a small casserole dish/microwave cake tin, sprinkle some sugar and cocoa over it add a cup of boiling water and zap for 4 minutes ,yummy gooey self saucing pudding!!

Barby Bake Veggie Combo

Ingredients:
 2 medium potatoes diced
 2 medium tomatoes diced or equivalent in cherry tomatoes halved
 1 medium to large carrot
 1 onion sliced
 Pumpkin approx 200g diced
 5 button mushrooms halved (or in 4s your choice)
 Hand full of beans (frozen or fresh)
 Corn on the cob cut into approx 25mm sections
 ½ teaspoon minced chilli
 1 teaspoon minced garlic
 1 – 2 tablespoon oil
 A dollop of butter/spread (melted or softened)
 Grinding of pepper
Method:
Partially cook potatoes & carrot in microwave for approx 3-4 minutes (if you don’t they may still be crunchy when the remainder is cooked.) If no microwave boil on stove top for a few minutes
Drain potatoes & carrots & place in mixing bowl with all other ingredients
Mix well so veggies a coated with the oil & butter/spread
BBQ method - place ingredients in perforated BBQ tray (as shown in picture) & place on open barby grill until veggies are cooked gently stir from time to time. Get best results if BBQ has lid & you cook most of the time with lid shut
Oven method – alternative method to the BBQ is to place vegies in baking dish & cook in preheated oven at around 180° for approx 30 mins or until vegies are cooked

Note:
•Can use other vegetables of choice
•Perforated barby dish can be found at most BBQ shops
•BBQ hot plate can also be used to cook veggies – Heap up on non stick hot plate & stir frequently until cooked

Preparation time: approx 15
Cooking Time: 30-40 mins

Barbecued Honey Chilli Pork

Ingredients:
 Pork cuts of choice
 ¼ - ½ cup Taylors honey chilli stir fry sauce
 ½ teaspoon minced garlic
 ½ teaspoon minced chilli
 Require basting brush
Method:
Place all ingredients into a marinading dish give a good shake & place in the fridge for approx 1- 2hrs
Crank up the Barby & place either on open grill or hot plate
Baste the meat during cooking with marinade left in dish
Note:
•If you prefer you can leave out the extra garlic & chilli & use stir fry sauce as it is
•If the Barby has a lid you achieve more flavour cooking with lid shut
•A bloody simple marinade that tastes good

Preparation time: Bugger all
Cooking Time: depends on thickness of cuts but approx 20 mins

Have been working on finding a selection of (home made) dried flavor mixes to take with us on a trip to Qld in the next couple of weeks. We have two anklebiters and only want to head to the supermarket for basics - so here is a dried mix that sounds great as a bake but would be equally good on a barbie I think .... will be trying this one before we go!!


KFC
2 cups p/flour
1 teasp each salt,basil,oregano,thyme,
2 tablesp each celery salt,black pepper,dry mustard,dry ginger
4 1easp garlic salt
6 tablesp chicken booster
8 tablesp paprika

Mix all together and label in a glass jar.
Dip chicken pieces into flour,egg and breadcrumbs then roll in KFC mixture.Spray with cooking spray and bake untill done.

Great because its baked not fried and its even better cold.
Chicken booster is just plain stock cubes in powder form

Quick Easy Marinades
Taylor’s Marinades - Honey Chilli / Sweet Soy Chilli & Sesame

Ingredients:
Taylors honey & chilli stir fry sauce or Taylors sweet soy chilli & sesame marinade (approx ½ cup)
½ teaspoon minced garlic
½ teaspoon minced chilli if you desire an extra bit of twang

Method:
Place all ingredients & meat in container & shake around to coat meat
Place in fridge for approx 1-2 hrs prior to cooking
Note:
•Can use straight from bottle as is but the extra garlic & chilli added is my personal preference
•This will marinade approx 500-600grams meat
•These are two very easy marinades that give good flavour & Ideal on pork, chicken or most other meats come to that
