One of our favourite things to do is go to the local pub on Sunday night for an easy feed. Our local has an awesome bistro that goes over and above the tired old steak and three veg. I had a super tasty pizza – a pinenut, camembert, spinach and bacon one. I always like to give different combinations a try, and I was very happy with my choice.

As I’m writing this I’m having trouble concentrating. My stomach is growling like a starved Rottweiler that has just been poked with a big stick, and all I can think about is what I’ll be having for dinner tonight – a big juicy steak.
A thick and tender scotch fillet, flame-grilled to medium rare perfection on the BBQ and then smeared with some wholegrain French mustard. Preparation time: 0 mins. Cooking Time: 15 mins. Eating Time: about 30 seconds.

Our DVD Production Manager, Lauren makes a damn fine carrot cake, and luckily for us, she kindly brings it into our office for afternoon tea. Lauren is from United States so all her recipes are in the American terminology – so you’ll have to translate them!
Lauren’s Carrot Cake
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans
Icing
1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
Preheat oven to 175 degrees C. Grease and flour a 9x13 inch pan.
In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To Make Icing: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans.
